Pearl (Israeli) Couscous Salad
I like to use a large variety of salad recipes to use as a side dish or take to an event. This salad recipe is easy and delicious too.
It's nice and light tasting. There is no mayonnaise in the ingredients which makes it easy to take to a backyard bbq, picnic or family event.

1 C uncooked pearl couscous - cooked to package instructions
4 oz. feta cheese
1 small red onion - diced
1 C cherry tomatoes - quartered
1/2 cucumber - diced
1/4 C kalamata olives - diced
1 Tbsp red wine vinegar
pepper to taste
Cook the pearl couscous according to package instructions. Let the couscous cool to room temperature.
Put the diced onion, cucumber, olives and tomatoes in a bowl. Add red wine vinegar and pepper to taste. Toss.
Add the couscous and feta cheese to the mixture. Gently toss it all together.
Serve immediately or place in the refrigerator until you are ready to serve.
Pearl couscous is also known as Israeli couscous or Jerusalem couscous.
You can find it in your regular grocery story. This photo is of the pearl couscous I buy.
It is easy to make.
Pearl couscous can be eaten hot or cold. The couscous retain their shape and texture even when reheated without clumping together as much as pasta or rice.
It tastes great! Even the kids love it!
