How to Make Pumpkin Seeds

Spicy, sweet and chipotle pumpkin seed recipes.
Spicy Pumpkin Seed Recipe:
- Preheat the oven to 250 degrees.
- Cut the top off the pumpkin and scoop out the seeds with your hands or a pumpkin scooper.
- Separate the pumpkin pulp from the seeds.
- Rinse the seeds under cold water to remove any of the remaining stringy pumpkin pulp from the seeds.
- Pat the seeds dry with a paper towel.
- Pour the seeds in a bowl and season with some olive oil, paprika, chili powder, garlic powder, parsley, pepper and salt; mix well.
- Spread the pumpkin seeds in a single layer on a baking sheet sprayed with non-stick cooking spray.
- The key to baking the perfect pumpkin seeds is to bake them low and slow. Bake at 250 degrees for 1 hour, stirring every 10 minutes.
Sweet Pumpkin Seed Recipe:
Smoky Chipotle Pumpkin Seed Recipe:
- Preheat the oven at 375 degrees.
- Separate the seeds from the pumpkin pulp. Rinse under cold water to remove the remaining stringy pumpkin pulp.
- In a medium bowl whisk together 2 egg whites, 2 teaspoons of chipotle powder and 1 teaspoon of salt.
- Pour the pumpkin seeds into the mixture and toss well.
- Spread the pumpkin seeds in a single layer on a baking sheet sprayed with non-stick cooking spray.
- Bake at 375 degrees for 20 minutes, tossing after 10 minutes.
